Fettuccine Alfredo is one of the world’s most popular pasta dishes…and most everybody is making it wrong, according to the president of Alfredo International.
Now, you may first say, what the heck is an Alfredo International? And what is this restaurant Alfredo 100 in New York?
Well, the previously mentioned president of Alfredo International, is the owner of Alfredo 100, is called that because he has a licensing agreement with the original Alfredo in Italy, which is 100 years-old this year. His previous restaurant, called Alfredo of Rome located in Rockefeller Center was pretty successful and Mr. Bellanca opened Alfredo 100, and used the Alfredo naming convention to honor Alfredo’s Roman heritage.
Having said that, who knew that FA was literally just egg noodles, butter, “young” parmesan and noodle water? I didn’t. I’ve been indoctrinated into that heavy cream, or sour cream, or all of the above type of way of making it. I don’t know if I’ve ever had the essence of FA. I want to.
And this looks like a mean plate of Fettuccine Alfredo.
