So, I used to get this prepackaged stuffed salmon meal from Fresh and Easy that I absolutely loved. As you may know, F+E no longer exists, or at least it no longer exists close to me. I’d been craving some stuff salmon recently and I thought it’d be good reason to figure out how to make it.
As always, here is the disclaimer:
I’m not a chef, I’m not even a cook… I’m just a dude with shit in my fridge who likes to put things together…. thats all.
I don’t measure shit. I will add in something just because. I will pour a little beer in something if I happen to be drinking one. I’m just out’chea winging it.
I will say though, the shit I make turns out really, really good.
I did a little bit of research aka googled and pinterest’d and found a couple of different recipes that I combined to hook this up.
This recipe on BA is pretty much what I did here:
Baked Salmon Stuffed with Mascarpone Spinach – bon appetit
The recipe is easy and it takes about 20 minutes
Spinach | Marscapone | Cream Chee | Feta* | S+P | Nutmeg | EVOO | Butter | Panko breadcrumbs
I added feta just because I like feta!

A few thoughts, I used waaaaay too much nutmeg. The recipe says add a pinch and as you know I don’t measure shxt and just said fvckit. I would cook the salmon lower for a little while and then blast it for the last couple of minutes at a really high temp to crisp up the top a little more.
Don’t get me wrong, it turned out pretty damn good but as always, there are little tweaks that could have made it even better.
