Poke /poʊˈkeɪ/ is a raw salad served as an appetizer in Hawaiian cuisine.
A week or so ago, Action Bronson dropped a video on Munchies on the internets of him making this Poké for #FuckThatsDelicious and I saw it and decided right then and there that I wanted to recreate it.
So, here is my shot.
Gotta get a really good grade of raw fish.
The spot that I went to is local, its called The Fish King and its here in Glendale. I usually go there to get good stuff to cook and never rocked any raw fish there but I know they have sushi grade.
I get black cod from there because its a lil bit difficult to find. This time, tuna.
Click through here to see the ingredients that Bronson used, I used what you see here.
As always, here is the disclaimer:
I’m not a chef, I’m not even a cook… I’m just a dude with shit in my fridge who likes to put things together…. thats all.
I don’t measure shit. I will add in something just because. I will pour a little beer in something if I happen to be drinking one. I’m just out’chea winging it.
I will say though, the shit I make turns out really, really good.
This one is a little bit different though, because I am absolutely unequivocally biting this recipe from Bronsolino.
Here is his video, and then I went in….
Fresh ginger on y’all bishes…..
Here, I hit em with the green onions and regular onions and then hit you with the soy sauce, sesame oil and mirin. Just a little bit of mirin.
Then cube out your fish to throw in the mix.
Quick note here, I made the bites too big. I probably should have gone 1/2 in. by 1/2 inch instead of what I did here. Still good, but a little heavy for each bite.
Stir it all up guys.
The light it up with some roasted sesame seeds….
Chop up some cilantro and throw it in the mix as well and you are on your way.
This is what Bronson’s finished product looks:
Here is what my finished product looks like:
I would say that I’m pretty damn close with it and I’m happy with the flavor profile. It’s lacking because I couldn’t find the right togarashi seasoning for flavorings, but I did my googles and used some miscellaneous stuff that I had to get close.
I did well. Bronson did his very well, and next time I’m going to do it even better.
Cheers to Bronson and go buy all of his music. Late.
