This is something that I have been working on for the last couple of days and its a straight power meal. Super easy to make and I’ve been crushing it for two days straight. I’m a fan of simple, do-it-all-in-one-or-two-dishes, type of dude and this fits the bill. Its eggplant, onions, tomatoes, rainbow chard and coconut milk simmered down and spiced up with some sriracha.
I cooked the vegetables and fruit first then added the coconut milk to cream it out, then poured it over some quinoa. Its not the prettiest thing, but it works and it keeps me from buying some fast trash. Prep time it about 10 minutes, cook time is about 25.
Seems super healthy, and its so simple. Make a big batch and scale it out for quick meals. Scale out two servings of rice that you can split for during the day at work.
