I had three things working here that made this soup happen. I had been flirting with starting a vegetarian thing for the next couple of months…. I had some random vegetables and canned goods that needed to be worked out…. I was hungry and didn’t really care how something would taste and wasn’t going to drive and go get something.
What was in my fridgerator was mushrooms, celery, bell peppers, and onion. What was in my cabinet was some corn, garbanzo beans, and coconut milk.
In this, I did not use the garbanzo beans.

I’m not a chef, I’m not even a cook… I’m just a dude with shit in my fridge who likes to put things together…. thats all.
I dont measure shit. I will add in something just because. I will pour a little beer in something if I happen to be drinking one. I’m just out’chea winging it.
I will say though, the shit I make turns out really, really good.
This was pretty easy, as I have gotten into making a LOT of soups or bisques or whatever you want to call them lately ever since starting up my CSA with Farm Fresh to You. I did what I’ve always done…. I just put all the vegetables in the pot, added a little bit of oil to sauté them down and then added some coconut milk. Add a healthy amount of sriracha and let it all cook down enough so that I can throw it in the blender.
After its soft, I pull it off the stove and let it cool down to the point that I want to work with it, and then blend it like its going out of style.
You are going to want to let it blend for a while because the celery is quite stringy so if you don’t, you will be eating something that feels like soup with hair in it. Thats not a good thing.
After the soup is all blended, I put it back in to the pot and add the corn.
Done and done.
Good to the last spoonful.
* I don’t know the different between soup and chowder and honestly, I don’t feel like looking it up right now, so I am posting both in the title of the post!
