I’m not a chef, I’m not even a cook… I’m just a dude with shit in my fridge who likes to put things together…. thats all.
I dont measure shit. I will add in something just because. I will pour a little beer in something if I happen to be drinking one. I’m just out’chea winging it.
I will say though, the shit I make turns out really, really good.
So, these days I am more into the bulk meal thing.
I like cooking, but I can waste a lot of time cooking and one thing that I am trying to do is free up more time to do more things that I need to do in my life, so I have to find a way to do that.
Mornings, I get behind. But, I have to do some internet work, work out, eat, get sorted and be at the office by 9 / 930, and I don’t like to be rushed. So I started looking at ways to make breakfast something I dont even think about daily, but I absolutely refuse to do the shake thing or the cereal thing.
First things first, you want to have some thawed out hash browns.
Dice all your vegetables and start browning the sausage.
In hindsight, I would have made this without the sausage and may never use it again, but its unnecessary. Go with more mushrooms or something.
Anyways, once the sausage starts to brown go ahead and throw in the onions to get some colour on those.
Once the meat is browned and onions done, spread evenly over the hash. Go ahead and begin to cook your vegetables down.
I would guess that you could use any vegetables here but I happen to like these. In hindsight, I should have thrown the broccoli in as well, and next time I’m going to reeeeeally veg this thing out but this is good for today.
Go with eggs and milk for you binder and the egg bake part. Almost every recipe I saw on the internets via Pinterest or whatever tells you to use 8-10 eggs.
I keeps it simple with mine. This is breffis for the week, so I just used 8. That’s like an egg and a half for breakkie per day. I’m goiog with that.
Mix in a cup of milk they say. I just did 3/4 because I’m not a huge milk guy (I’m lactose intolerance’ish) but I did go ahead and mix in some of the chee while I was stirring up the eggs.
Once the vegetables are cooked down, add them to your casserole and spread evenly.
I like tomatoes.
I layers some of the goods into the pan.
Once you have it looking like you like it to look, go ahead and pour the egg mix over the casserole, spread your cheese even and cover it up.
Put it in the oven on 350* for an hour.
The move I did, and this was quite clever if I do say so myself, was once it was prepped and ready to cook, I threw it in the oven and then went to the gym in my complex. Worked out for an hour and when I was back…..
…turns out you want to take it out and take off the foil and cook another 10 minutes to let the chee get right.
This was good.
And see, there is more for the week for a single dude like me – or a gang of breffis for the fam if you have one of those things.
Addendum – No sausage. More chee. Would have distributed the chee better too. Not on top but I’ll need to figure out integrating it in the middle of the casserole – maybe fold it in with the vegetables. The eggs will bind it all together so it wont seem strange I don’t think.
This is a good one though. I’m going to make it a million times for the rest of the year until I’m sick of it. This will take my mornings to another level.
