Meatballs first. I had some loose ground beef left over from yesterday and the sliders mix that I made, so I combined the two and was able to hammer out six meatballs. I didn’t know know if the meatballs were going work with this soup, but hey, waste not, right… and it was fresh ground beef so I had to use it or toss it. I used it.
Mix it up, roll them out with the hands, and then cook over medium heat until all the sides are browned and its cooked about 55% through. Bring it off to the side so that it rests. It will keep cooking while its resting and then you will use the hot soup to cook the rest off later.
Peppers from my last FFTY delivery.
Squash from my last FFTY delivery. Cut all the peppers and the squash to size and then just steam the shit out of all that. You don’t need to get fancy here because all of its going to get blended later anyways. You want a soup, not a stew.
I had some mushrooms left over so I decided to wash those and throw them in the soup as well.
After everything is steamed, throw the “babaganoush” into the blender with some spice game and coconut milk or cream. I personally like shit spicy, so I threw some sriracha in there for good measure. That, a little bit of Lawrys seasoning salt and blended it until I got a smooth consistency that I wanted. After that, just dump it into a pot and simmer and season it until its up to par.
Now, here is where it gets funky… like we said earlier about the meatballs not being all the way cooked through, now we portion out the meatballs into storage containers (2 per piece) and pour the hot soup over the meatballs and let it sit for a while. This is going to cook your meatballs all the way through.

I dont measure shit. I will add in something just because. I will pour a little beer in something if I happen to be drinking one. I’m just out’chea winging it.
I will say though, the shit I make turns out really, really good.
In retrospect, I would have blended it a lot more. Should have been totally smooth and the only texture should have been from the mushrooms and the meatballs. Gonna run this one back really soon though. It was good bro.
