Homemade Lettuce Wraps…. with skrimps.
If you are like me, every time you go to some restaurant and you order apps, you never think to order the lettuce wraps… but everytime you are with someone who does, you enjoy them shits like nobodies business. I probably hadnt had lettuce wraps for two years until I was in some random town on a work trip and one of the people that we were with decided to pipe up and order this hippy food. Apps are things like nachos and wings or something with a whole bunch of cheese on it and some sort of dipping sauce. But as we were sitting down there crushing the lettuce wraps and fighting over that last piece of lettuce, I was like, hmmmm I might need to get this as an app more often. Especially since I’m trynna slim it down.
Tonight is a big night for sports, there is playoff baseball on, professional football on and usually on those nights I order a pizza and get a suitcase of beers and keep it moving. I rememered that I had some butter lettuce left over from my last FFTY delivery, so I said you know what, let me try and make some of these fancy lettuce wraps. So I went and got some skrimps and some celery and some carrots. What is up next, is what happened….
As always, my disclaimer:
I’m not a chef, I’m not even a cook… I’m just a dude with shit in my fridge who likes to put things together…. thats all.
I dont measure shit. I will add in something just because. I will pour a little beer in something if I happen to be drinking one. I’m just out’chea winging it.
I will say though, the shit I make turns out really, really good.
Chop up your veggies and scrimps… and throw them in the skillet. Dont worry about getting the cuts uniform, you just need enough uniformity so that it is easy to roll up in lechuga and eat.
I wanted to kick it up…. you know me.
This is after just a few minutes of it cooking together but what you want to do is put this off to the side and let it cool down for about 10 to 15 minutes. I’m not a fan of hot stuff on cold lettuce, so you want the food to get down to a workable temperature.
After its cooled down and ready, plate that shit up. I messed around and made a nice lil sriracha dipping sauce for it too (sriracho, lil mayo, lil ranch dressing, and greek yogurt) … so easy.
I didnt like that at all….
