I made some ‘Gluten Free’ brownies last night

I’ve been craving something sweet for the last few days, and I just so happened to be at the market looking for quinoa when I saw this box in the ‘healthy food’ section of the aisle.

I looked on the back of the King Arthur’s Gluten Free Brownie Mix and it just so happened that there were only three ingredients to this one… eggs, water, butter/oil. Simple enough for someone like me.

The butter or oil part was a little bit difficult to justify, but I didnt plan on having too much of this so I was ok with making them.

I did however mix in some walnuts and chocolate chips to do the double chocolate thing … I’m a cook, but not a baker… to the point that I’ve never backed anything that didnt have parents or was given to us by the earth, so even though this wasnt a difficult recipe by any stretch of the imagination, I looked at this as my first foray into baking.

I only had two smallish pieces last night, cut two more small pieces for today and figuring out what to do with the rest of it. No way, I’m going to crush this thing by myself… plus its just good enough where you think to yourself (or I think to myself), “Man, this would be a straight panty dropper with some ice cream and whipped!” I dont need that shit in my life right now… I’m trying to get right. Sample it and keep it moving.

Pretty good stuff though, if I do say so myself. A little on the sweet side for me, very dense and chocolaty, but good. The edges are the best part.
