Funny that I didn’t even think about checking for an instagram page like this given that I’m one of those dudes that has definitely googled, “Too much mango bad for you?” before…. but thanks to a collabo betwixt Julie and the mango board (two of my favorite tings ever btw) I have found the perfect ig page.
Looking around, and clicking through to their website, there are so many recipes that I want to try, I don’t even know where to start first.

Well, you’re in luck because I’ve been using all my delicious mangos that @mangoboard sent me for the #MealPrepMango ideas I’ve been sharing with you to make this Mango Coconut Cauliflower Rice A LOT lately! Today, I am sharing the recipe with you, and you MUST try it! Ingredients (Serves 4): 6 Cups cauliflower, cut into bite-sized pieces 1 ½ Tbsp coconut oil Salt ¼ Cup unsweetened coconut flakes 1 Large mango, cut into cubes Directions: 1. Place the cauliflower into a large food processor and process until broken down and "rice-like.” 2. Heat the coconut oil in a large pan over medium-high heat and add the cauliflower, a pinch of salt and coconut flakes. Cook until lightly golden brown, about 3-5 minutes. Cover, reduce the heat to medium and cook until the cauliflower is tender, stirring occasionally, about 4-5 minutes. 3. Transfer to a bowl and toss in the mango cubes. 4. Devour! #Regrann
