FIRST WE FEAST is definitely one of my favorite sites on the internets and here is another awesome post. This is information for life. Something all of us need to know. I can’t tell you how many times I am at the market and run through all of this in my head. Which cut is good for marinades again? What’s the best for a roast? What colour am I looking for again.
The one thing that I’d add, is that spending good money on meat is worth it.
It’s easy to roll and go with the low cost stuff at your everyday grocery store, but if you are willing to spend a little bit more and eat a little bit less, and shop at a place like Gelson’s or Whole “Paycheck” you can taste the difference. If you really want to Willy out, you can go ahead and find a legit butcher and throw down. The meat is usually better and you are helping a local business.
