I’ve been in a love affair with brussels sprouts lately. I was never a huge fan until about 6 months ago… I used to think they tasted like shit and were too tangy … but after I actually learned how to cook them, I became their biggest fan. The irony is that it isnt that hard and all you have to do is use a little but of elbow grease. Make sure you cute the bottom off… make sure you take the outer layer off… make sure you give them a good wash… then season ’em and throw them in the broiler / steamer / toaster over / skillet and you are good to go.

Brussels sprouts, as with broccoli and other brassicas, contains sulforaphane, a chemical believed to have potent anticancer properties. Although boiling reduces the level of the anticancer compounds, steaming, microwaving, and stir frying does not result in significant loss.
Brussels sprouts and other brassicas are also a source of indole-3-carbinol, a chemical which boosts DNA repair in cells and appears to block the growth of cancer cells.
